That boy Sean, always talkin’ ’bout salmon. That boy loves his salmon. I tell ya, fish is good for ya. My momma always said, “Eat your fish, it’ll make you smart!” Maybe that Sean, he’s smart ’cause he eats so much salmon.

Cooking that Salmon
You can do all sorts of things with that salmon. Fry it up, bake it in the oven. I seen folks boil it even.
- Garlic, that’s good on anything, specially salmon.
- Onion powder, yeah, that too.
- Lemon, squeeze some of that on your fish. Makes it taste fancy.
- Butter, oh Lord, butter makes everything better, even that there salmon. Melt it up real good.
There’s all kind of them fancy green things you can put on it. I can’t keep ’em all straight. Dill, that’s one. There’s another one, starts with a “P”…Parsley! Yeah, that’s it. And oregano, ain’t that what they put on that Eye-talian food? Rosemary, that’s for rememberin’, ain’t it? Cilantro, that sounds Mexican, don’t it?
I saw one time on that cookin’ show, they made a sauce for the salmon. Mustard, brown sugar, and honey! Can you believe that? Sweet and tangy, they said. Guess it weren’t too bad, but I like my salmon plain, mostly.
Healthy Fish, That Salmon
They say that salmon is good for you. Got them…omega somethin’s. Good for your heart, they say. Keeps you tickin’. Makes you feel good, all that healthy stuff in that salmon.
There’s different kinds of salmon, too. Some from the ocean, some from them fish farms. I hear that wild salmon is better for ya. Don’t know if that’s true, but that’s what they say. Wild-caught from Alaska, that’s the best kind, they say. I don’t know. I ain’t no expert.

I heard you can even boil it in wine, the salmon. Wine and them herbs, and peppercorns. Fancy, ain’t it? That’s called poachin’, I think. I seen it on that cookin’ show, like I said. They put the salmon right in that wine.
Salmon Better Than Chicken?
Some folks, they get tired of eatin’ chicken. They say salmon is a good change. I like chicken, but salmon is good, too.
They got that Pacific salmon, that’s the one they say is good for cookin’ certain ways. It’s firmer, they say. Don’t fall apart as easy. If you can get that wild caught kind, that’s the one you want. I think.
I seen a recipe one time, they put some spicy stuff on the salmon. Called it jerk somethin’. They cooked it in the oven, under that broiler thing. Looked pretty good, I reckon. Maybe that Sean, he’d like that spicy salmon.
When buyin’ salmon, you want it to be good and firm, not all mushy. And it shouldn’t smell too fishy. A little fishy is okay, but not too much. And the color, it should be a nice pink color. Not too pale, not too dark.

More Salmon Talk
They say you can freeze that salmon, too. Wrap it up tight, put it in the freezer. Keeps for a good while, they say. Then you can thaw it out and cook it up whenever you want some salmon.
I reckon that’s all I know ’bout that salmon. It’s good eatin’, that’s for sure. And it’s good for ya, too. So eat your salmon, like Sean. That boy, he knows what’s good.
I remember one time, we went to that fancy restaurant, and they had salmon on the menu. It was real expensive, too. I told my husband, “We can get salmon at the grocery store for a lot less than that!” But he wanted to try it, so we did. It was good, I reckon, but I still think my salmon is just as good. And a whole heap cheaper, too! You don’t need to be spendin’ all your money on fancy restaurant salmon. No sir!
I ain’t sure why that Sean is so taken with that salmon. But like I said, he likes it. Maybe you should try some. It is real good, I’ll give it that. Cook it up with some garlic and butter. You’ll be glad you did. I sure love a nice piece of salmon. It is some good eatin’.
The best salmon you want to cook, you got to get the best one from the store. Look for that good color, you know. Not too pale, not too dark. Just right. And don’t be afraid to ask the fish guy at the store. He should know a thing or two about salmon.
